Recipe: Breakfast Salmon Hash
This makes a lovely change from porridge and is a great fertility friendly breakfast full of healthy fats and antioxidants.
Serves 2
Ingredients:
200g Smoked salmon
1 large sweet potato - chopped into small chunks
1 avocado
2 handfuls of sliced spring onions
2 handfuls of chopped mushrooms (I used button and shiitake shrooms)
2 handfuls of rainbow chard (you could use spinach, kale, cabbage)
Method:
Add some olive oil to a frying pan and throw in the sweet potato - gently fry for 10 mins
After about 5 mins throw in the mushrooms, spring onion and chard
It's ready once the sweet potato is tender and everything else is nicely wilted
To serve - pop the hash onto a plate, top with smoked salmon and add the sliced avocado to the side
Tips & optional extras:
Add a poached egg to the top of this for an extra fertility boost
Use up leftover tray bake vegetables by warming up in the pan
