Recipe: Breakfast Salmon Hash

⁣This makes a lovely change from porridge and is a great fertility friendly breakfast full of healthy fats and antioxidants.⁣

Serves 2

Ingredients:

  • 200g Smoked salmon⁣

  • 1 large sweet potato - chopped into small chunks⁣

  • 1 avocado

  • 2 handfuls of sliced⁣ spring onions⁣

  • 2 handfuls of chopped mushrooms (I used button and shiitake shrooms)⁣

  • 2 handfuls of rainbow chard (you could use spinach, kale, cabbage)⁣

Method:

  1. Add some olive oil to a frying pan and throw in the sweet potato - gently fry for 10 mins⁣

  2. After about 5 mins throw in the mushrooms, spring onion and chard⁣

  3. It's ready once the sweet potato is tender and everything else is nicely wilted⁣

  4. To serve - pop the hash onto a plate, top with smoked salmon and add the sliced avocado to the side⁣

Tips & optional extras:

  • Add a poached egg to the top of this for an extra fertility boost⁣

  • Use up leftover tray bake vegetables by warming up in the pan⁣
